About Desiccated Beef Kidney
Desiccated beef kidney is a freeze-dried whole-food supplement marketed as one of the densest dietary sources of selenium (a 3 g serving may provide >100% RDA), B12, riboflavin, and the histamine-degrading enzyme diamine oxidase (DAO). DAO supplementation has clinical support from a small open-label pilot in histamine intolerance (Schnedl 2019, n=28) and a small RCT in chronic spontaneous urticaria (Yacoub 2018), but those used standardized porcine kidney DAO extracts (Daosin/Histame). Freeze-drying itself can preserve DAO activity, but oral DAO requires acid-resistant enteric coating to reach the duodenum intact — standard gelatin capsules of desiccated bovine kidney do not provide this, so the DAO claim on these products is mechanistically unsupported even when activity is present in the powder. There are no RCTs evaluating desiccated kidney supplements broadly; clinical support is indirect via constituent nutrient bioavailability. Two safety flags: (1) selenium load is real — combining with selenium-rich multivitamins or Brazil nuts can push intake near the UL (400 mcg/day for adults). (2) Kidney is the primary cadmium accumulation organ in cattle (cadmium has a 10–30 year biological half-life in humans); without third-party testing specifically for cadmium, sourcing carries genuine heavy metal risk that generic 'tested for heavy metals' marketing does not always cover. No established RDA/UL for kidney itself.
